Boneless Fresh Ham

PREP:

Defrost Ham & remove from packaging. Keep twine intact during the roasting process. 

Step 1:

Pre-heat oven to 325º F.

Coat ham with desired blend of seasonings.

Recommended Seasonings:

1/4 cup Kosher Salt
1/4 cup Packed Brown Sugar
1 tbsp Fresh Rosemary
1/2 tbsp Fresh Thyme

Optional: Cut a small slit in the middle of the larger end of the Ham and stuff remaining seasonings inside to ensure the flavor spreads evenly throughout the Ham.

Place defrosted, seasoned Ham on an elevated rack in roasting pan.

Cook Ham on bottom oven rack for approx. 2 hours. Internal temperature should be 145º F.

Remove from oven and let sit about 1 hour.

Step 2:

Increase oven temperature to 425º F.

While Ham is baking, prepare desired glaze.

Recommended Glaze Recipe:

Tangy Honey Glaze

1/2 cup Packed Brown Sugar
2-3 tbsp Pineapple Juice
2-3 tbsp Honey
1 Large Orange
1/2 tbsp Dijon Mustard
Pinch of Ground Cloves
1/2 tsp Lemon Juice (or to taste)
Add Brown Sugar, Pineapple Juice, and Honey to a sauce pan. Zest Orange over mixture and squeeze out about half of the orange. Stir. Add Dijon Mustard and a Pinch of Ground Cloves and mix over high heat until it comes to a boil. Reduce heat and let simmer until mixture thickens (about 5-10 minutes).

Coat Ham in half of prepared glaze. Place in oven for about 5-10 minutes.

Step 3:

Remove Ham from oven and coat in remaining glaze. Cook for an additional 5-10 minutes.

Remove from oven and let sit 20 minutes.

Step 4:

While the Ham rests, remove remaining juices from the bottom of the roasting pan. Separate the fat from the juices and serve as gravy for Ham.

Step 5:

Slice Ham into 1/4 inch thick pieces. Serve with pan gravy and your favorite Easter sides.
