Meal Kit Bundle: Tangy Pork Lettuce Wraps

Time: 30 minutes | Serves: 2-4
INGREDIENTS:
For The Sauce
2 tsp. Fresh Grated Ginger |
4 cloves Minced Garlic |
1 tbsp. Honey |
3 tbsp. Soy Sauce |
1-2 tbsp. Nut Butter (Recommended: Peanut Butter) |
1 tbsp. White Vinegar |
2 tsp. Hot Sauce |
For The Lettuce Wraps
1 (16oz) Pre-Portioned Ground Pork (1lb) |
1 Small Diced Yellow Onion |
1 cup Shredded Carrots |
Large Romaine Lettuce Leaves |
Olive Oil |
Optional: Add (12oz) BLP Stir-Fry Mixed Veggies |
To Serve
Chopped Scallions |
Soy Sauce |
DIRECTIONS:
Step 1
Defrost (1) 16oz Package of Pre-Portioned Ground Pork. Set aside.
Step 2
In a large bowl, combine ginger, garlic, honey, soy sauce, peanut butter, vinegar, and hot sauce. Whisk together and set aside.
Step 3
Add olive oil to large skillet over medium-high heat. Once heated, add in ground pork. Cook until fully cooked through (there should be no 'pink' remaining in the meat).
(For crispy pork: Simmer in oil after fully cooked through to brown the meat.)
Step 4
Add in diced onion. Cook for about 1-2 minutes. Add in shredded carrots and cook for about 5 minutes. (Optional Extra Veggies: add BLP stir-fry mixed veggies at the same time as shredded carrots and cook about 5-7 minutes)
Step 5
Give sauce mixture a final whisk to make sure ingredients are well-combined. Pour into skillet over the pork and vegetable mixture. Stir and simmer over medium-high heat about 10 minutes until caramelized & browned.
Step 6
Wash and dry lettuce leaves. Add pork mixture to the middle of the leaf. Top with chopped scallions and extra soy sauce.
